Ingredients

  • Sushi Mosaic: 5 fresh asparagus stalks, 3–4 nori sheets, 400–500g very fresh white fish fillet (Sea Bream/Denis, Halibut, Cod, or Yellowtail), 1 tbsp soy sauce (for brushing nori).

  • Fish Seasoning Mix: 1 tbsp garlic powder, 1 tsp fine sea salt, 1 nori sheet ground to powder or finely chopped, 1 tsp finely ground dry za'atar, 1 tsp finely ground dry coriander, a little black pepper, optional store-bought garlic spice blend.

  • Optional Curry Sauce: 1 tbsp green curry paste, 3–4 tbsp coconut milk, a little warm water.

Method

    Blanch Asparagus: Peel asparagus, blanch in boiling water for 8 minutes, plunge into ice water, and drain.

    Wrap in Nori: Cut nori sheets in half, brush with soy sauce, and roll each asparagus stalk inside.

    Prep Fish: Slice fish into 1 cm thick strips and coat with the mixed seasonings.

    Build Roll: Place a whole nori sheet on a mat, layer fish strips, place the nori-wrapped asparagus in the center, and roll tightly.

    Cook Gently: Wrap the roll hermetically in plastic wrap and cook in water at ~45°C for 25 minutes. Chill completely.

    Slice and Serve: Remove plastic, slice into 2 cm rounds with a sharp knife, and serve over green curry coconut sauce.
