Ingredients

  • Nut & Date Base: 200g unroasted, unsalted mixed nuts (walnuts, almonds, peanuts), 100g white sesame seeds, 100g pitted Medjool dates, 2 tbsp crunchy natural peanut butter, 1 tbsp coconut oil (optional), 4 tbsp silan (date syrup) or honey.

  • Silky Chocolate Layer: 300g 70% dark chocolate (coarsely chopped), 50g butter, 1/2 cup (125ml) heavy whipping cream.

  • Optional Toppings: Flaky sea salt (coarse sea salt), roasted peanut chips, or orange zest.

Method

    Prep Baking Pan: Line a 16x22 cm dish with parchment paper.

    Blend Base Ingredients: Place raw nuts, sesame seeds, and pitted Medjool dates into a food processor. Pulse for ~1 minute until coarsely ground to a wet sand texture.

    Bind Base Mix: Add peanut butter, coconut oil, and silan (or honey). Pulse briefly until cohesive.

    Press into Pan: Transfer the mixture into the dish and press firmly into an even 1 cm layer using a spatula or back of a spoon.

    Melt Chocolate Ganache: Gently melt chopped dark chocolate with butter and heavy cream in a double boiler or microwave on low heat until glossy and smooth.

    Pour & Spread: Pour chocolate ganache evenly over the nut layer and smooth out.

    Chill & Slice: Refrigerate or freeze for at least 1 hour until chocolate sets. Sprinkle with flaky sea salt or orange zest, slice into squares, and store in an airtight container in the fridge for up to 10 days.
