Difficulty  Very Easy

Ingredients

  • Fat Base: 200g unsalted butter, softened at room temperature (or vegan butter substitute)

  • Sweetener: 100g powdered sugar (icing sugar)

  • Structure: 300g all-purpose flour (approx. 2.1 cups), sifted

  • Optional Enhancers: 1 tsp pure vanilla extract / pinch of salt / chocolate chips / jam for filling

Method

  1. 01

Cream Butter & Powdered Sugar: In the Morphy Richards stand mixer bowl fitted with the paddle attachment, beat the softened butter and powdered sugar together until smooth and creamy.

  2. 02

Add Flour & Mix Briefly: Add the sifted flour (and vanilla/salt if using). Mix on low speed just until a cohesive, smooth dough comes together in one bowl. Do not overmix.

  3. 03

Shape or Customize: Divide dough into equal portions or roll into desired shapes (e.g., jam-filled butter cookies, chocolate dip cookies, rolled log slices, or stamped cookies).

  4. 04

Bake to Perfection: Arrange cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 170°C (340°F) for 12–15 minutes until light golden around the edges.

Cool & Store/Freeze: Allow cookies to cool completely before dusting with icing sugar or serving. Dough can be frozen raw for quick future baking!
