Ingredients

  • Dry Base: 1 cup rolled oats, 1 cup plain flour, 1½ tsp baking powder, ½ tsp baking soda, 1 tsp ground cinnamon, ½ tsp salt.

  • Protein Wet Ingredients: 1 cup cottage cheese (blended smooth), ⅓ cup pure maple syrup (or honey), 1 egg, ¼ cup milk, 1 tsp vanilla extract.

  • Fruit Fold: 1 cup fresh or frozen blueberries (no need to thaw).

  • Optional Oat Crumble Topping: ¼ cup rolled oats, ¼ cup plain flour, ¼ cup brown sugar, ¼ cup melted butter.

Method

    Prep Oven & Dry Mix: Preheat oven to 175°C (350°F) and line a 12-cup muffin tin. Whisk rolled oats, flour, baking powder, baking soda, cinnamon, and salt in a bowl.

    Blend Wet Ingredients: Puree cottage cheese until smooth using an immersion blender. Whisk smooth cottage cheese with maple syrup, egg, milk, and vanilla extract.

    Combine & Fold: Stir dry ingredients into wet batter until just combined. Gently fold in blueberries.

    Crumble Topping & Bake: Divide batter into muffin cups. Mix crumble ingredients (oats, flour, brown sugar, melted butter) and sprinkle on top. Bake at 175°C for 25 minutes until golden brown.
