Crunchy Lettuce Salad with Smash Potatoes & Rich Vinaigrette

Salad Base: High-quality Romaine, Iceberg, or Salanova lettuce leaves, 6–7 Majhoul dates (halved, pitted), 6–7 soft dried figs (soaked in warm water and cut into thin strips), 1 crispy pita from the oven
(broken into croutons), 2 tbsp grated parmesan (or cashew cheese for parve), freshly ground black pepper, sea salt or Maldon salt, fresh basil leaves. -
Crispy Smashed Potatoes: 4–5 medium boiled potatoes, olive oil, grated parmesan, salt, pepper, thyme.

Rich Vinaigrette Dressing: Juice of half a large lemon, 4–5 tbsp olive oil, a drop of jalapeño sauce (or spicy sweet chili), 1 tsp amba, 1 tbsp grated parmesan, 1 grated garlic clove, finely chopped preserved
lemon, 1 anchovy strip + a little anchovy oil, salt and pepper, 1/2 tsp chili. -
Garnish: Pumpkin seeds.

Make Smashed Potatoes: Boil potatoes 10-12 minutes. Place face down on a seasoned baking sheet with oil, salt, pepper, and parmesan. Cover with foil and bake at 180°C for 30 minutes. Remove foil, smash with a cup, and bake another 5-10 minutes until crispy.

Prepare Dressing: Mix all dressing ingredients in a small bowl and refrigerate for 10-15 minutes to let flavors meld.

Prep Salad Ingredients: Tear lettuce and basil by hand. Prep the soaked figs, halved dates, and baked pita croutons.

Assemble: Toss lettuce, herbs, dates, figs, and pita croutons with the dressing. Add the crispy smashed potatoes on top.

Garnish and Serve: Finish with parmesan and pumpkin seeds, and serve.

Soften dried figs in warm water and cut into thin strips, pit and halve the dates, and bake a pita until crunchy to break into homemade croutons.

Combine lemon juice, olive oil, jalapeño sauce or spicy sweet chili, amba, grated parmesan, grated garlic, finely cut preserved lemon, an anchovy strip with a little oil, salt, pepper, and chili. Chill for 10-15 minutes.

Gently tear crisp lettuce leaves and fresh basil by hand, add the soaked figs, halved dates, and crunchy pita pieces, pour the dressing over, and toss gently.

Top with the crispy smashed potatoes, grated parmesan, and pumpkin seeds, then serve immediately.
