Mix Semolina, Oil & Seasoning: Coats semolina grains for fluffiness. In a large microwave-safe glass bowl, combine 2.5 cups semolina, salt, and ½ cup oil. Mix thoroughly until all semolina grains are evenly coated in oil.

Add Boiling Water & First Microwave Cycle: Initial steaming phase. Pour 2.5 cups of boiling water into the bowl and stir well to combine. Cover loosely or place in the microwave and cook on high for 8 minutes.

Fluff & Add Water:Breaks up clumps. Remove carefully from the microwave. Use a fork to gently open up and fluff the semolina
grains, releasing steam. Pour in the remaining ½ cup of warm water and mix evenly. -

Second Microwave Cycle:Final cooking cycle. Return the bowl to the microwave and cook on high for another 4 minutes until fully cooked and tender.

Pass Through Sieve:Creates authentic feather-light texture. Transfer hot couscous into a traditional couscous sieve (napa / sifta) and rub through using your hands or a spoon to create separate, ultra-fluffy grains. Serve warm with rich vegetable soup or meatballs.
