Prep & Oven: Preheat your oven to 175°C (350°F). Line a standard loaf pan with parchment paper or grease well.

Mix Wet & Dry in One Bowl: In a large bowl, whisk together sugar, milk, oil, lemon juice, lemon zest, and vanilla extract until sugar dissolves.

Sift Flour & Leaveners: Sift flour, baking powder, baking soda, and salt directly into the bowl. Whisk gently until just combined into a smooth batter—do not overmix.

Fold Blueberries: Toss blueberries with 1 tbsp of flour (this prevents them from sinking to the bottom) and gently fold them into the cake batter.

Bake: Pour batter into the prepared loaf pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs.
