Ingredients

750g sweet potatoes (2 peeled into julienne strips for texture; rest halved for
roasting) -
2 tbsp soy sauce

100g all-purpose flour
-
1 tsp maple syrup (or sugar)

1 tsp salt & 1/2 tsp ground black pepper

Olive oil (for roasting)

Prep & Roast Sweet Potatoes: Julienned peel from 2 sweet potatoes. Roast the remaining halved sweet potatoes face-down with olive oil, maple syrup, and salt at 200°C for 40 minutes.

Form Dough: Scoop roasted flesh into a bowl with julienned strips, soy sauce, maple, salt, black pepper, and flour. Mash until soft and slightly sticky.

Pan-Fry in Butter: Heat butter in a skillet. Shape latkes using a ring mold and wet spoon. Fry 2–3 minutes per side until deep golden brown.

Serve: Drain on a rack and serve warm with chive goat-yogurt sour cream dip.
