Ingredients
-
Wet Batter Base: 3 large eggs
-
Sweetener: 1 cup (200g) granulated sugar
-
Liquid/Fat: ½ cup (120ml) vegetable oil
-
Moisture Element: 1 cup (200g) sour cream or sweet cream (or orange
juice/plant milk for parve) -
Dry Base: 1.5 cups (210g) self-rising flour (or all-purpose flour + 1.5 tsp baking powder)
-
Flavoring: 1 tsp vanilla extract & pinch of salt
-
Cinnamon Streusel Topping: ½ cup brown sugar, 2 tbsp ground cinnamon, 2tbsp flour, 2 tbsp melted butter/oil, optional chopped walnuts
Method
-
01
Prep Oven & Pan: Preheat oven to 170°C (340°F). Line a standard loaf pan (English cake pan) with parchment paper.
-
02
Whisk Wet Ingredients: In one large bowl, whisk together the eggs, sugar, vegetable oil, sour cream (or orange juice), vanilla extract, and salt until unified and smooth.
-
03
Fold In Flour: Add the self-rising flour to the wet mixture and whisk gently just until a smooth batter forms without overmixing.
-
04
Prepare Streusel & Layer: In a small bowl, mix brown sugar, cinnamon, flour, and melted butter/oil to form a crumble. Pour half the cake batter into the pan, sprinkle half the cinnamon crumble, add remaining batter, and top generously with remaining streusel.
-
05
Bake & Serve: Bake for 40–45 minutes until the cake rises high and a skewer inserted into the center comes out clean. Cool slightly before slicing.
Step by step
Clear process images displayed in the same order as the method.
1
Arrange all your measured ingredients on the counter, including the bowl of dry ingredients, small bowls of eggs, butter, and flavorings, ready to begin.
2
Place your hand inside a specialized baking liner or parchment paper to press and fit it neatly into the base and corners of the dark metal loaf pan.
3
Pour the smooth, rich cinnamon-infused batter smoothly from the mixing bowl into the prepared, lined loaf pan to form the base.
4
Scatter a generous layer of crumbly, sweet cinnamon streusel mixture evenly down the center and across the surface of the batter inside the pan.
5
Bake the loaf until it rises with a golden-brown crust, then let it rest in its pan, wrapped partly in a kitchen towel.
6
Once cooled slightly, gently pull the liner tabs to lift or slice the moist, flavorful loaf cake, ensuring a clean and professional presentation.
Use room-temperature eggs and do not open the oven during the first stage of baking.
