Ingredients

500g elbow macaroni or short tubed pasta (uncooked)

3 cups milk (or milk + heavy cream)

2 cups water or vegetable broth

30g butter

150g sharp Cheddar cheese, grated

150g Gouda or Gruyère cheese (Basher Fromagerie blend), grated

100g Mozzarella cheese, grated

1/2 tsp Dijon mustard or nutmeg (secret twist)

1/2 tsp garlic powder, salt, and black pepper

Extra grated cheese & breadcrumbs for crispy topping
Method

Combine Base in Pot: In a large oven-safe pot or deep skillet, combine uncooked pasta, milk, water, butter, and seasonings (salt, pepper, garlic powder, Dijon mustard).

Simmer Pasta: Bring to a gentle boil over medium heat. Stir frequently to prevent sticking, and cook for 8-10 minutes until pasta is tender and liquid has absorbed into a starchy cream.

Melt Cheesiness: Turn off heat. Stir in the Cheddar, Gouda, and Mozzarella until fully melted and silky.

Broil Crust: Sprinkle additional grated cheese and breadcrumbs over top. Broil at 220°C (430°F) for 5 minutes until bubbling, golden-brown, and crispy.

Serve: Serve hot straight from the pot!
