Ingredients

1 side of whole fresh salmon fillet (butterflied horizontally)

2 cups cooked sushi rice or white rice (seasoned with rice vinegar & sesame oil)

300g fresh broccoli florets

Fresh lemon slices & cilantro for garnish

Sweet-Sour-Spicy Glaze: 3 tbsp soy sauce, 2 tbsp mirin/honey, 1 tbsp sweet chili sauce, 1 tsp grated ginger, 1 garlic clove minced

Wasabi Mayonnaise: 3 tbsp mayonnaise, 1 tsp wasabi paste, 1 tsp lemon juice

Prep Salmon: Slice salmon horizontally to butterfly it into an open pocket.

Stuff: Fill the center pocket with seasoned cooked rice.

Assemble Pan: Place stuffed salmon in a pan surrounded by fresh broccoli florets.

Glaze: Brush sweet-sour-spicy Asian glaze over salmon and drizzle over broccoli. Spread a light coat of wasabi mayonnaise on top.

Bake: Top with lemon slices and bake at 200°C (400°F) for 20-25 minutes until golden and glossy.
