Ingredients

Fish Kebab & Stuffed Peppers

400g Sea Bream (Denis) fillets, hand-chopped into ½ cm pieces

1 bundle fresh cilantro, chopped

4 stems green onion, finely sliced including white parts

1 red chili, chopped
-
3 cloves garlic, minced
-
2 tbsp olive oil
-
Salt and black pepper to taste

Tinkerbell or Shushka sweet peppers, halved and cleaned

Spelt Yogurt Pita

2 cups spelt flour
-
1 tsp baking powder
-
½ tsp salt

¾ cup goat yogurt 7%+ fat or protein yogurt

2 tbsp olive oil

Cold water as needed by teaspoons

Fresh Tahini-Yogurt Sauce

½ cup raw tahini
-
½ cup thick goat yogurt 7%+ fat

Juice of 1 small whole lemon
-
1 clove garlic, crushed
-
Sea salt, black pepper & sumac for garnish

2–4 tbsp cold water for desired consistency

Prepare Spelt Yogurt Dough: Combine spelt flour, baking powder, and salt in a bowl. Add goat yogurt and olive oil. Knead for 3–4 minutes until pliable and smooth (add teaspoons of water if dry). Cover with a towel and rest for 20 minutes at room temperature.

Make Fish Filling & Stuff Peppers: Hand-chop the sea bream fillets into coarse ½ cm pieces. Mix thoroughly with cilantro, green onion, chili, garlic, olive oil, salt, and pepper. Firmly pack the fish mix into the halved Tinkerbell peppers so the filling stays secured.

Whisk Tahini-Yogurt Sauce: Mix raw tahini and goat yogurt until unified. Add lemon juice, minced garlic, salt, and pepper. Slowly whisk in cold water until smooth, creamy, and pourable.

Bake Pitas on Skillet: Divide dough into 6 balls, roll each into a ½ cm thick circle. Heat a heavy dry skillet (no oil) and cook each pita 1–2 minutes per side until golden and puffed. Store wrapped in a towel.

Pan-Sear Fish Peppers & Plate: Heat olive oil in a skillet. Cook stuffed peppers fish- side down first for 3–4 minutes until golden, then turn to soften the pepper skin. Spread tahini-yogurt sauce across a plate, arrange warm stuffed peppers, dust with sumac, and serve with freshly baked pitas.
