  • 4 large eggs (separated into whites and yolks)

  • 1/2 cup (100g) sugar

  • 1 package (80g) Instant Vanilla Pudding mix (or cornstarch + vanilla)

Method

    Whip Egg Whites: In a clean bowl, whip egg whites with half of the sugar (50g) until fluffy, soft peaks form.

    Mix Yolk & Cheese Base: In a second bowl, whisk egg yolks, remaining sugar, white cheese, and instant vanilla pudding mix until smooth.

    Fold Gentle Batter: Fold the whipped egg whites into the cheese mixture in 3 batches gently using a spatula to retain airiness.

    Bake with Steam: Pour batter into a lined 24cm springform pan. Place a tray of hot water at the bottom of the oven. Bake at 160°C (320°F) for 50 minutes until golden and set.

    Cool & Serve: Turn off oven and leave door cracked for 30 minutes to prevent sinking. Chill in fridge before slicing and serving!
