Seasonings: Salt, freshly ground black pepper, pinch of nutmeg

Soften Matzah: Lightly rinse matzah sheets under warm running water or soak in milk for 30 seconds. Drain and crush into medium bite-sized pieces.

Mix Batter: In a bowl, combine the crumbled matzah, eggs, chopped fresh spinach, and grated cheese/seasonings. Mix well to coat the matzah.

Fry to Perfection: Heat olive oil or butter in a non-stick skillet over medium heat. Pour in the matzo brei mixture and flatten with a spatula.

Flip & Serve: Cook for 3-4 minutes until golden-brown underneath. Flip carefully and cook the other side for 3 minutes until crisp and set. Serve hot!
